How to even begin when it comes to Red Stringybark (Eucalyptus macrorhyncha)?! We do say this about all our varieties (of course!), but this one really is a treasure. 

Red Stringybark trees only flower every four to eight years. And in our case, it's been seven years since we've seen this honey. 

The nectar gives this honey the most beautiful hue.

When in full bloom this tree and flower comes into its own in the late summer and early Autumn.

We are all in agreement here at Mount Henry Honey, including Henry's dad, who is our beekeeper extraordinaire of 35 years, that this is one of the very best honeys we've ever tasted. And if you ask me (Gemma), it's the yummiest.

This specific honey has been collected from hives placed around Red Stringybark woodlands in the Central Tablelands, or Central West. Think Upper Lachlan Valley near Woodstock/Lyndhurst - if you're familiar with that area.

And taste wise? Well! It has a truly distinct, rich, deep, whole toffee/caramel-like flavour, with earthy/nutty undertones. 

Its texture is thick, and colour - a bronzed amber. It smells like caramelised sugar, with a hit of eucalyptus.

Incidentally, we also discovered Red Stringybark has a very high mineral content, and has the second lowest GI rating of any Australian honey (44).

This is one to be savoured, and eaten by the spoonful!
